Almost guilt free chocolate chip cookies!

So My husband and I have been trying to learn to eat healthier and lose weight since January of this year, We have changed a lot of things, We still really struggle on the weekends. I love baking, But I was realizing that my baking was terrible haha.. 
So I begin to search for Healthier recipes, But still let me make treats once in a while.. Well proudly this is only the 2nd time I've made anything like this since January. :)


Anyways, On with the good stuff, I found this recipe for Low calorie chewy chocolate chip oat meal cookies!! I got excited.
So when I went grocery shopping I grabbed the couple of things I needed to make this and finally got a chance to make them today!! And thought I just had to share with ya'll!




Low calorie chewy chocolate chip cookies. 




  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 2 tbsp unsalted butter, room temperature
  • 1/2 cup sugar
  • 1/2 cup unpacked brown sugar
  • 1 large egg
  • 1/4 cup unsweetened apple sauce
  • 1/2 tsp vanilla extract
  • 2 cups quick oats
  • 3/4 cup semi chocolate chips


Preheat oven to 350°; line two baking sheets with parchment paper or use a silpat.

In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon.

In a large bowl, with a mixer, cream together the butter and the sugars on medium speed.  

Add the egg, followed by the applesauce and vanilla extract.

Working by hand, stir in the flour mixture and the oats until just combined and no streaks of flour remain; stir in the chocolate chips.

Drop heaping tablespoonfuls (approx 1tbsp each) of the dough onto prepared baking sheets, flattening each cookie slightly (I forgot to do this). Bake for about 10-12 minutes, or until cookies become light brown at the edges.

Let cool on baking sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.

Store in an airtight container so you don't eat them all in one sitting! 
Makes about 24 cookies at 1 TBS each.
 

When I found the recipe it has said the recipe made 30 cookies at 3 tablespoons each, and that there were 190 calories for 2 cookies. After making the recipe I found that to be way off... So I refigured the calories and it's about 90 calories a cookie and it makes about 23-24 cookies :) 
Well off to go clean the mess up in the kitchen from these cookies and start dinner!

I'm still here.

So... I've decided I'm really no good at this keeping up with blogging thing. I try so hard, and things come up or I don't know what to blog about.. Or I do projects then forget to take before pictures. I guess It's just a learning experience and hopefully I'll get better at it! :) 


I have something very exciting to share with ya'll! As you may of figured out, I'm a paper crafter :) I make cards and sell them to support my hobby :) *hoping one day to set up a Etsy shop* 
Well anyways. This weekend I will be attending my first ever scrapbooking retreat! It's not a all weekend retreat.. just a 13 hour retreat. :) I'm overly excited about it. and a bit nervous on knowing what to take and what to leave home. :) I spend any free time I have making cards to sell or for a birthday or what-not. So stuff like this upcoming Saturday is the only time I really get to take time for ME and get my scrapbooking done :) 

I'm also exciting because it should also give me something to post about next week! :) 

Last weekend we rearranged our bedroom and got new bedding I was so excited to do it as a post and do before and after pictures and forgot to take before pictures, I did the same thing with my Craft room yesterday :( So see I have attentions of doing posts but to me it's not fun when I forget to take before pictures.. 
One of these days I'll be on top of it! :)

I found it!

Well I ended up getting a little bit of crafting motivation later in the week!
I had to get some birthday invitations done for a friend and decided I would get some Easter cards done because it will probably sneak up on me sooner then later. It took me all week to finish the Easter cards but they are done! :) YAY
So here are some pictures :)  1st is the birthday invitations :)


And then here are the Easter cards I made.. I was pretty happy with the way they turned out! :) 
Hopefully I will be making more Spring/Easter cards in the next week or so!!

Who am I

So.. here I take another shot at blogging.
I seem to do real well and then slowly fade away.
This time I want it to be different. :)
A little about me.. ....
I'm  crafter.. of many kinds.. I mostly do card making and scrap-booking, A little sewing. and any thing else my heart desires. As I make things I plan on posting pictures on this blog :)
I also love to cook and bake. We recently started trying to make a meal plan each week and stick to a grocery budget again and eat a lot healthier. I plan to post recipes and maybe some pictures of different meals we do on here too :)
I also have a small home daycare.. I currently watch 5 little boys, your probably thinking I'm crazy... But hey.. it keeps like interesting.
I'm a proud Christian, Believer of Jesus Christ our savior!! And I'm amazing daily at the amazing ways he moves in my husband and I's lives.
Yup I said husband. I'm also married... To an amazing man for 2 1/2 years now.
We are blessed with lots of family around us. So likely you will hear me talk about that quite often on here too! :)
Oh ya I'm also a independent consultant for The Pampered Chef, And I love it.. I've almost been doing it for a year now.. and I do it very part time :)
I'm in the process of trying to start my own card making business too :) So be on the look out for an Etsy shop link :) Hopefully I will have something up with in the next month or so..
My goal is to post at least 3 times a week.. I would love to post daily.. But I figured If I would set myself a simple goal that it would be easier for me to hold myself to it! :)
Well Guess that's all I have to say for now. :)
I think of something more exciting for my next post :)
